Big Batches

I'm learning to prep meals for the week using the notepad I got when we got married 3 years ago. I think this is only the 2nd page I ever wrote on.

I'm discovering that I just don't want to wait for the rice to cook before I can eat. Now that I get home at dinnertime instead of 2 hours before, there's less time for high maintenance foods. You may call it impatience, but I call it hunger.

So I'm working on scheduling my dinners so that over the weekend I can cook rice or beans or whatever else I might need throughout the week.

My menu plans have to change, however, when I check my garden for any growth and discover there are 5 zucchinis and over a dozen cucumbers ready to pick.

They especially have to change when I pick 6 pattypan squash and another dozen cucumbers the next night.

See how organized I am? We can just eat them all on Friday and Saturday. That sounds good. Very well balanced.

And maybe I can pawn some off on my co-workers. So far, 1 zucchini and 4 cucumbers have new homes!
