Chocolate Coconut Ice Cream with Peanut Butter Oatmeal Chunks

Maybe it's not quite the season for ice cream, but sometimes it's the best thing even though it's cold outside! I've been known to eat ice cream in -6 degree weather, so I'm always ready!
 
A few weeks ago, I was really in the mood for some good chocolate ice cream. Rather than venture out into the cold, I made my own! It was everything I wanted - creamy & chocolatey with cookie crumbles & a fudge sauce. Yum!

The leftovers didn't last long! :-) I bet yours won't either.




Chocolate Coconut Ice Cream with Peanut Butter Oatmeal Chunks
 
Ice Cream
2 (14 oz) cans light coconut milk
2/3 c unsweetened cocoa powder
1/3 c coconut sugar
1 T arrowroot starch
1 T vodka
 
Combine all ingredients in a blender and process until super smooth. Pour into a large container and refrigerate for 2-4 hours or until completely chilled through. Proceed with making the pb oatmeal balls and the fudge sauce.
 
Hint: No need to rinse out the blender yet. You can use it for the fudge sauce, too.

PB Oatmeal Balls

1 c old fashioned oats
1/2 c ground flaxseed
1 T chia seeds
3 T almond butter
5 T peanut butter
1/2 tsp cinnamon
3 T honey
1/4 c semi-sweet chocolate chips
 
Combine everything except the chocolate chips in a bowl. Fold in the chocolate chips. Roll mixture by the tablespoon into balls. If it is too crumbly, add a touch more honey. If too wet, add a small amount of oats. Place balls on a cookie sheet and refrigerate until firm. Then transfer to an airtight container and store in the refrigerator.

Chocolate Fudge Sauce
2/3 c pitted dates
1 c almond milk (I used Silk Unsweeted Original)
3 T cocoa powder
 
Blend dates and almond milk in a blender until super smooth. Pour mixture into a saucepan and bring it to a boil. Once boiling, turn down the heat to a simmer and cook for 5-10 minutes, stirring often. Mixture will thicken as it cooks. Once it thickens, remove from heat and vigorously stir in the cocoa powder until smooth. Place in an airtight container and allow to cool. Refrigerate to store until time to assemble the ice cream.

After the ice cream mixture has chilled through completely, place it into your ice cream machine (I use the KitchenAid attachment) and churn according to machine's instructions. While it churns, get out a 9"x9" baking pan (preferably metal), your pb oatmeal balls, and the fudge sauce. Crumble 3-4 pb oatmeal balls in the bottom of the pan.
 
Once the ice cream is done, spread half of it over the crumble balls in the pan. Top with more crumbled balls and a thick layer of fudge sauce. Spread the remaining ice cream on top, sprinkle with more balls, and smooth out the top into an even layer. Press a sheet of plastic wrap across the top of the ice cream. Cover the baking pan and place in the freezer for at least 1 hour before serving.
 
Ice cream is best the day it is made. In the following days (if it lasts that long!), make sure to remove it from the freezer 30 minutes or so before you plan to eat it so that it softens.
 
Top with remaining fudge sauce when serving, if desired. (It's the perfect final touch!)

Chocolate Bunny Butt Cake + Healthy Peanut Butter Frosting


Last weekend, we had my grandparents over for dinner & to play pinochle. Since we won't see them on Easter, I wanted to have it be an Easter-ish dinner. I asked the Bup what he wanted for dessert and he said, "Chocolate cake!" Surprise! That's what he always wants...

I started thinking of how to make chocolate cake more spring/Easter themed, & stumbled on the Bunny Butt Cake, courtesy of Betty Crocker. Of course, I had to healthify it, so I made my own cake & frosting.

This cake is dense & chocolatey. It's my favorite chocolate cake - one of the few cakes that I could eat without any frosting. That's really saying something, because usually I'm a frosting nut & don't much care about the cake part. While I'm not going to say this is a health food & you should have it every day, it is fairly healthy for chocolate cake.

And the frosting!!!! It's delicious! This is my new go-to peanut butter frosting. It has no butter & no refined sugars, yet it's sweet & smooth, just like it should be. Even if you don't make the cake, you could still use the frosting for other cakes/cupcakes. Believe me, it's yummy!

Chocolate Bunny Butt Cake
Adapted from Eating Well
Serves 8-10

1 3/4 c white whole wheat flour or spelt flour
3/4 c evaporated cane juice (or organic sugar)
2/3 c unsweetened cocoa powder
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1 c buttermilk (I used 2 T apple cider vinegar + 1 c unsweetened almond milk)
3/4 c packed light brown sugar
2 large eggs, lightly beaten
1/4 c coconut oil, melted
2 tsp vanilla extract
1 c hot strong black coffee
1 batch Healthy Peanut Butter Frosting (see recipe below)
2-4 T shredded coconut.

Preheat oven to 325°F. Coat a 1 1/2-quart ovenproof bowl (8 inches across top) and 6 muffin cups from a regular-size muffin tin with coooking spray.  

Whisk flour, granulated sugar, cocoa powder, baking powder, baking soda and salt in a large bowl. Add buttermilk, brown sugar, egg, oil and vanilla. Beat on medium speed for 2 minutes. Add hot coffee and beat to blend. Don't worry - the batter is supposed to be thin.

Pour cake batter into the muffin cups, filling each about 2/3 full. Pour remaining batter into the ovenproof bowl.

Bake cupcakes 20-22 minutes, and the bowl 60-70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes each before removing from muffin cups and bowl. Cool completely on wire racks.

Place large dome cake, flat side down, on a large serving platter. Coat with frosting to desired thickness, reserving some frosting for the feet and tail.  Place 2 cupcakes for feet on the bottom of the cake. Place 1 cupcake for the tail a few inches up, centered between the feet. Secure each cupcake with a toothpick through the center, pushing in until it does not show. Carefully coat feet and tail with frosting. Sprinkle shredded coconut onto the tail, pressing gently so that it sticks to the frosting.

Note: This chocolate cake can also be made in 2 round 9" or 8" pans, or a 9x13 pan. Baking times will vary.


Healthy Peanut Butter Frosting
Makes 2.5 cups of frosting

1 1/3 c natural peanut butter
16 dates
2/3 c water
1/4-1/2 tsp. salt (if your pb has salt in it, use the lesser amount and adjust to taste)
1/3 c old-fashioned oats
3 T maple syrup
1/2 c unsweetened almond milk

Combine all ingredients in a high speed blender or food processor. Process until smooth and creamy, adding more milk if necessary. Refrigerate in an airtight container for 2 hours to allow flavors to meld and frosting to thicken. This can be done ahead of time; I made mine the night before. When the cakes are cooling, remove from fridge to allow to come to room temperature for easier spreading. Extra frosting can be frozen in an airtight container for about 3 months.

Asian Inspired Brown Rice Noodle Bowl


We had to make a quick dinner last Thursday. I get home from work at 5:15ish, & we needed to cook & eat in an hour before heading out again. I was originally going to make a pasta with tomato sauce (that I made & froze earlier), but I was in the mood for something different. This dish came together quickly, especially with the Bup helping chop veggies while I mixed the sauce.

We had a few moments of panic when the water wouldn't come to a boil. Somehow the flame went out on the burner, but it was still pumping gas out into the air! Luckily the Bup discovered what happened before we got gassed out. Even with the set-back, we still had time to do the dishes before leaving.


I love the many flavors of Asian cooking. There is such a variety of sauces & they all have their own unique differences that really bring something to a dish. As a vegetarian, it's always a joy to go to an Asian style restaurant because their foods rely heavily on whole grains & veggies. 

This dish had equal parts crunch & chew, plus some creamy bites due to the avocado. The sauce does have a kick to it from the chili garlic sauce, so if you are sensitive to heat, you may want to omit that. It would change the flavor a bit, but it would still be good. I hope you get the chance to make this. I know we'll be making it again. I can't wait!


 
Asian Inspired Brown Rice Noodle Bowl
Serves 4
 
8 oz. brown rice noodles
1 small red onion, thinly sliced
2 large or 4 small bell peppers, sliced
1 jalapeno, diced
3 oz. edamame (fresh or frozen)
1 carrot, shredded
1 avocado, diced
juice from 1 lime
1/4 c rice vinegar
1 T toasted sesame oil
3-4 T Bragg Liquid Aminos (or soy sauce)
1 T natural creamy peanut butter
2 cloves garlic, minced
1 tsp. chili garlic sauce (like this)
1/2 tsp. sea salt
2 tsp. honey
1-2 T water, if needed to thin
1/4 c peanuts

Start the heat under a large pot of water to begin to bring it to a boil. Saute the onion, bell peppers, jalapeno, carrot, & edamame over medium heat for about 6-7 minutes, or until the veggies soften. 
In a small bowl, gently toss the avocado with the fresh lime juice (this prevents browning). Set aside. Whisk all of the remaining ingredients together in a separate bowl.
Once the veggies and sauce are ready, cook the rice noodles according to package directions.*  Drain & combine noodles, veggies & sauce in a large serving bowl. Serve immediately. Top each serving with about 1 T of peanuts.
*Rice noodles take such a short time to cook that it's best to wait so that you can mix everything together as soon as they are done cooking.

Chocolate Avenue Grill


This is my last post about meals I ate to celebrate my birthday. I need to stop for 3 reasons:

1. My birthday was 8 days ago.

2. You're going to think all I do is eat huge amounts of food for every meal. (This may or may not be true...) :-)

3. I'm getting very full.

That said, I've been loving every minute of these celebrations. Last night, my in-laws took us to the Chocolate Avenue Grill. I'd been there once before for my bachelorette party dinner, & I remembered it being great. When I was still a Concierge, I'd recommend the place a lot & everyone came back pleased with their meal.


To start, I had the Strawberry Poppyseed Salad. I was a little skeptical about the dressing when I saw it, but once I tasted it I couldn't get enough. It was lightly sweet with poppyseeds & sesame seeds in it. The toasted almond slivers really complimented the juicy strawberries, too.

On the side, I had their fresh rolls. They were melt in your mouth delicious & I would go back just for more of them!


For my meal, I got the Mediterranean Risotto, described as "Fresh zucchini, asparagus, Roma tomatoes, red onions, black olives and basil folded into a creamy Parmesan risotto with a hint of lemon." The veggies were super fresh & the flavors blended very well. I was surprised by how much sauce was on it, as usually a risotto is creamy & thick, but it was still quite good. Bonus: It was a large serving, so I have leftovers for lunch!


I'm a member of their e-club, so they sent me a free dessert coupon as a birthday treat. I should've had it boxed up, because I was beyond full already, but of course I didn't. :-)

Their pastry chef came out & visited us - she knew my in-laws from church. She recommended the housemade Peanut Butter Melt Away Pie. I usually don't order pb pie because I'm often disappointed & it doesn't sit well in my stomach (not sure why not, this only happens with pb pie), but I tried it. It was a little different than usual, with a brownie crust & ganache topping. I liked the added chocolate!

Peanut Butter Ice Cream


In case you don't already know, I love ice cream. Luckily, I married a man who loves it almost as much as I do. We're a match made in heaven. :-)

Did you ever hear the song by Sarah McLachlan called "Your Love is Better Than Ice Cream?" Good song!



Just listen. It's cute.

Every year I wait all winter for Rainbow Snow to open. They have the very best peanut butter soft serve. They're my favorite local ice cream shop, mostly because of the pb ice cream. Plus we can take a nice evening walk and end up there. Walking home carrying an ice cream cone makes the ice cream taste better. The Bup gets a chocolate milkshake, which he says is better than any he's ever had!

Now it's fall already and almost time for them to close. :-( I have about 1.5 months to get my pb ice cream fix. We try to bring all of our friends there when they visit us. I promise you won't be disappointed if you go! 

Over the winter, I'm going to try making my own version by mixing in peanut butter when I make banana soft serve. I haven't tried it yet, but the plain banana and chocolate banana are both delicious. If you want a healthy, icy, creamy dessert, try it out!

Eating Whole Foods: Breakfast

Two of my friends recently asked me about helping them eat a healthier diet. I love that kind of stuff, so I decided to do a segment on the blog about it.


One of the first questions was about breakfast, and since that's the first meal of the day, that's where we'll start. 

Tip #1: Don't skip breakfast. Ever. 

When you wake up, you most likely haven't eaten for at least 8 hours. That's fine when all you're doing is sleeping, but your body needs fuel to carry you through to lunch.


Tip #2: Eat a piece of fruit.

If you really can't handle eating in the morning, at least eat a piece of fruit. No, it's not really a big enough breakfast to tide you over until lunch, but at least you are eating something healthy to start the day. I like to add fruit to whatever I'm eating, like a banana on pb toast or peaches on oatmeal.

Another option is to make a smoothie. They're a great way to get in your daily servings of fruit and veggies. It's easy to make your smoothie the night before and keep it in the fridge to grab on the way out the door in the morning,



Tip #3: Learn to like oatmeal. 

For me to talk about breakfast, I have to do an ode to oatmeal. Just hear me out.

I didn't always like oatmeal. My mom ate it for breakfast pretty often and I thought she was crazy. Then one day I thought maybe this was something I should try, so I asked her to get me some packets of cinnamon oatmeal, please!

It was like eating running, clumpy, sugary goo. Back to cereal and english muffins, thanks.

Then one day I had baked oatmeal when we were out. This stuff is incredible, like a muffin and cereal all rolled into one food. I figured maybe I could like oatmeal then, so I kept trying. I made my own baked oatmeal a few times and ate leftovers for a few days, but oatmeal still wasn't part of my daily breakfasts.

When I started reading more blogs, I got some great ideas that looked like they'd make oatmeal better. Making it on the stove or in the crock-pot with old-fashioned or steelcut oats tastes so much better than the packets.

Best discovery ever: top it with peanut butter!



Tip #4 Aim for whole grains.

No matter what you're having for breakfast, be it pancakes, muffins, bagels, toast, etc., have the whole grain version. If you're buying it, look for the first ingredient on the list to say whole grain. If you're making it, use white whole wheat or regular whole wheat flour in place of all or at least part of the flour. Unrefined carbohydrates give you energy for a longer period of time.



Tip #5: Add protein to the meal. 

As much as it pains me to dwell on protein, since Americans are always hung up on it and actually get much more than is needed, it really does help keep you full longer. If you're going to eat breakfast, it should be worth your while. No one wants to be hungry 2 hours later. My favorite way to incorporate protein is by topping my breakfast with nut butter, but there are a lot of ways to get some protein. 

I like my breakfast to be on the sweet side, but if you like savory, eggs are a great option. They make a filling, protein rich breakfast and they're very versatile. Add some veggies for extra nutrients! 

Yogurt can also be a good way to get in some protein, but watch the sugar content because some of the varieties are full of it!

What I Ate Wednesday

Zucchini Bread Oatmeal - I made this last night from a recipe on OhSheGlows.com. It didn't taste exactly like zucchini bread but it was similar and I love having veggies in my breakfast but not tasting them! (Kinda like a Green Smoothie!) I added a peach & a spoonful of pb.
 
 

Plus a mug of Pomegranate White Tea from my favorites store, Trader Joe's!
 
For lunch:
 
 
Massaged kale salad w/ EVOO, balsalmic vinegar, garlic powder & s&p, plus carrots & chickpeas. On the side, a slice of homemade cinnamon raisin bread topped with peanut butter.
 
For snacks:
  



 
Pineapple in the morning and a peach in the afternoon!
 
For dinner:


 
Guacamole & Bruschetta (by Mckensie & Dan, our fabulous hosts!), Kale chips (we brought these), & Yuengling Lager (from Charis).

Super Bowl Treats A Week Late

 

Our dessert for our Super Bowl party for 2 was Peanut Butter Chocolate Pillows from Joy the Baker. I was happy there were only 2 of us because these were delicious! I had an extra sheet of phyllo dough in the freezer so when I came across this recipe I knew it had met it's destiny.  Since I waited so long to post these, may I suggest having them as a Valentine's treat instead of party fare? They're multi-purpose pillows!


Mom helped me stuff the pillows. It was a messy process. I wish I had put more peanut butter on each square but I can't imagine the mess if I had! (Sorry for the shadows in the picture.)



Aren't they so cute? At this stage they reminded me of ravioli. Which makes me think about stuffing savory things into these pockets...mmmmm!

Salt & Vinegar Roasted Chickpeas! A great snack for football games!


Oh the beer. This one was tasty but 1 bottle was plenty for one sitting. It's pretty heavy and full of spices!

A Dipping Dessert



I first had it about 10 years ago when my aunt brought a batch to a family get together and I loved it. Then I forgot about it until I found it on Jessica's How Sweet It Is blog. Her post was actually variations on the theme - Snickerdoodle, Peanut Butter Cookie, and Chocolate Fudge. I made the original recipe and split it into 3. We had original, snickerdoodle and peanut butter.



The peanut butter was my favorite (surprise!). Actually, I can't believe I haven't talked more about peanut butter on here. I eat it on/in everything - my oatmeal, apples, bananas, toast, bagels, dipping sauce, muffins, icing, noodle salad (that wasn't a big hit...) and anything else I can get my hands on.

Can you believe my husband never heard of putting peanut butter on bagels until I asked him for it? The first time he made me one, he spread it on so thin that I could barely taste it. He's into it now, though, and it a little more generous with the pb. :-)


Maybe we could just have some wine with that?

Brunch Paninis


One of my friends and my favorite things to do when we get together is cook. We have fun and get to visit without spending lots of money. Our favorite things to make are customizable. We all have different tastes and food ideas. Usually that means we make personal pizzas, but on Saturday morning we made brunch paninis.


Tiffany's was California style with avocado, mozzarella, spices & turkey.



It was so good we stuck her in Lexus' cage so we could have it. I picked out the turkey...


Bryttani's was a pizza panini with mozerella, spices, and turkey pepperoni.


Mine was vegetarian - peanut butter and apple slices. Sadly the pb didn't ooze out - I should've used more!

And now I need to get my own panini maker. What is it about squashed sandwiches that is to appealing? It must be the nice grill lines.
