How can you resist that face??? Eeeek! This cat never ceases to amaze me. She's always up to something. Some of her favorite things right now include water (from anywhere but her bowl!), plants, window sills, & the strings from the window blinds. She still greets us at the door & follows us all around, but now she doesn't sit on our laps or want to be held as much. I can't believe how big she's getting. :-/
We had a fairly uneventful week with lots of work & church meetings. I'm looking forward to a fun weekend with friends & family. Hope your weekend is great, too!
Here's what we've been eating in the last week:
Breakfasts
- Raspberry yogurt with Sunflower Seed & Coconut Granola
- Go Dairy Free's Whole Wheat Apple Cinnamon Vegan Scones - These were light, moist & full of cinnamon-apple flavor. None of the density that often comes with using all whole wheta flour was apparent. We'll definitely make them again.
- Angela's Vegan Bananas Foster Baked Oatmeal - This is SO good! We're going to try the bananas foster part on top of coconut ice cream. I couldn't quit licking the spoon!
- Gena's Toasted Almond Quinoa Bake

Lunches

- Jessica's Coconut Milk + Citrus White Bean Spread - I think we'd enjoy this more with lemon or lime than the orange, but it's very refreshing & a nice change from our normal bean dips.

- Gluten-Free Rotini with Angela's Pumpkin Cheeze Sauce & Broccoli
- Baked Beans
- Ashley's Polenta Dippers - If you've never tried polenta like this, you must! It gets nice & crispy on the outside, but soft/chewy on the inside. Perfect for dipping in baked beans or chili!
- Sauteed Brussels sprouts
- Avocado + Egg + Mushroom Sandwiches on Jessica's Whole Wheat Oatmeal Sandwich Bread
- Gena's Crunchy Cabbage & Green Apple Sesame Slaw
Cooking night with friends
- Leftover baked beans & polenta fries

- Leftover Tomato Spinach Shells with Lightened-Up Cheese Sauce
